Ingredients
- Chicken Broth - ½ cup
- White bread - 3.5 oz
- Buttermilk - 0.3 cups
- Onion - 1 head
- Garlic - 8 cloves
- Parsley - 1.2 oz
- Grated Pecorino Pepato Cheese - 1.8 oz
- Salt - 4 teaspoons
- Ground Black Pepper - to taste
- Whole egg - 4 pieces
- Dried Rosemary - 1 teaspoon
- Nigella Seeds - 1 teaspoon
- Lean Beef - 17.6 oz
- Pork Mince - 17.6 oz
- Passata Tomato Sauce - 5 cups
Step by Step guide
Step 1
Pour gelatin into a bowl and add the broth. Let it sit for 5 minutes. Heat in the microwave until the gelatin is completely dissolved. Place in the refrigerator.
Step 2
In a mixer bowl, soak pieces of bread in buttermilk. Allow the bread to absorb the liquid.
Step 3
Add chopped onion, Parmesan, parsley, salt, pepper, bacon, egg yolks, oregano, fennel, and the set broth.
Step 4
Mix with a mixer. Start on low speed, gradually increasing it. The mixture should be homogeneous. Add 1/3 of the total amount of ground meat and mix.

Remove the mixer, add the remaining ground meat, and mix thoroughly by hand.

Place a skillet over heat. Form small meatballs and fry them until golden brown, then transfer to a plate.
Step 7
Place a large skillet over heat, pour in the tomato sauce. Bring the tomato sauce to a boil and add the meatballs. Simmer on low heat for about 10 minutes.
