Ingredients
- Smoked haddock fillet - 28.2 oz
- Vegetable Oil - 1 fl oz
- Celery salt - 21.2 oz
- Heavy cream - 7 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients. Preheat the oven to 320°F.
Step 2
Peel the celery root and cut it into random pieces.
Step 3
Transfer the celery to a pot, add a little water, and bring to a boil.
Step 4
Cover the pot with a lid and simmer on low heat until soft, about 20–25 minutes.
Step 5
Cut the salmon fillet into portion-sized pieces, leaving the skin on.
Step 6
Heat the vegetable oil in a skillet and sear the fillet skin-side down over high heat until crispy.
Step 7
Transfer the fillet to a baking sheet and place it in the oven for 15 minutes. The fish will be tender and slightly undercooked inside, which is how it should be.
Step 8
Transfer the cooked celery root to a blender, add the cream, and blend until smooth. Season with salt and pepper to taste.
Step 9
Season the finished salmon with salt and pepper, and serve with the celery purée.
