Ingredients
- Tomatoes - 2 pieces
- Green onions - 3 pieces
- Red Chili Pepper - 1 piece
- Eggs - 4 pieces
- Milk - 3 fl oz
- Olive Oil - 1 teaspoon
- Cheddar cheese - 3.5 oz
- Sour Cream Flatbreads - 2 pieces
- Sour Cream - to taste
Step by Step guide
Step 1
In a small bowl, mix the tomatoes, half of the green onions, and half of the red pepper with seasonings and set aside.
Step 2
Beat the eggs, milk, and seasonings with a fork.
Step 3
Heat the oil in a large skillet and sauté the remaining onion and pepper for 1 minute, then pour in the egg mixture.
Step 4
Gently push the eggs to the center of the skillet. Then remove from heat and add the cheese.
Step 5
Stir, then place on the flatbreads. Roll up and cut in half. Serve with homemade tomato salsa or sour cream.
