Description
Larb is a national dish of Laos, but it is also very popular in Thailand, for example. It can be made with various types of meat, fish, or mushrooms — everything is quickly sautéed and seasoned with spicy sauces and lime juice. We made larb using ground chicken.
Ingredients
- Peanut Butter - 1 fl oz
- Ground meat - 17.6 oz
- Lemongrass - 1 stalk
- Ground ancho chili pepper - 1 piece
- Lime - 2 pieces
- Fish Oil - 1 tablespoon
- Sweet Chili Sauce - 1 tablespoon
- Spanish onions - 1 head
- Cilantro - 1.1 oz
- Fresh Mint - 0.5 oz
- Roasted Peanuts - 1.4 oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Heat half of the oil in a wok over high heat.
Step 3
Sauté half of the ground meat with chopped lemongrass and chili. Stir constantly and break up any clumps, cooking for 2–3 minutes.
Step 4
Stir constantly and break up any clumps, frying for 2–3 minutes. Then transfer the cooked meat to a clean, oven-safe dish and repeat with the remaining oil, ground meat, lemongrass, and chili. If frying a large amount of meat at once, it will release a lot of moisture and start to steam.
Step 5
Mix the lime zest and juice, fish sauce, and sweet chili.
Step 6
Drizzle the meat with this sauce.
Step 7
Slice the onion into julienne strips.
Step 8
Chop the cilantro.
Step 9
Remove the leaves from the mint, and if they are large, chop them as well.
Step 10
Stir in the onion and herbs into the minced meat.
Step 11
Serve topped with fried peanuts.
