Ingredients
- Cilantro - 2 stems
- Vegetable Oil - 2 tablespoons
- Shallot - 2 heads
- Garlic - 3 cloves
- Thai Bird's Eye Chili - 1 piece
- Coconut Milk - 15 fl oz
- Fish Oil - 2 teaspoons
- Orange zest - 3 pieces
- Grated Ginger Root - 1 piece
- Lemongrass - 1 stem
- Basil - 2 stems
- Cod fillet - 4 pieces
Step by Step guide
Step 1
In a large skillet, heat the oil over medium heat. Add the shallot, garlic, and chili, and sauté for 2 minutes until the shallot becomes slightly translucent.
Step 2
Pour in the coconut milk, fish sauce, lime zest, ginger, lemongrass, cilantro, and basil. Season the cod with salt and pepper. Then transfer it to the coconut broth. The fish should be half submerged in the broth. Bring to a boil, cover the skillet, and reduce the heat. Cook the cod until done, about 5 minutes.
Step 3
Using a spatula, transfer the cod to bowls. Add lime juice to the broth. Season the broth with salt and pepper. Then ladle the broth over the fish in the bowls, scooping up the broth along with the vegetables. Garnish with cilantro and basil leaves. Serve immediately, garnished with lime wedges.
