Thai Curry Noodles with Broccoli and Tofu
Ingredients
- Vegetable Oil - 2 teaspoons
- Onion - 2 heads
- Cilantro leaves - ¼ cup
- Red curry paste - 2 tablespoons
- Curry Powder - 1 teaspoon
- Turmeric - 1 teaspoon
- Coconut Milk - 14 fl oz
- Vegetable Broth - ¾ cup
- Brown Sugar - 2 teaspoons
- Firm tofu - 12 oz
- Fettuccine Pasta - 4.9 oz
- Lime - 1 piece
- Broccoli - 5 cups
Step by Step guide
Step 1
Heat the oil in a medium pot over medium-high heat. Sauté the shallots in the oil for 2 minutes.
Step 2
Add the cilantro, curry paste, curry powder, and turmeric, and cook for 1 minute.
Step 3
Pour in the coconut milk and broth, add the sugar, and bring to a boil. Reduce the heat to medium, cook for 5 minutes, then add the tofu. Simmer for 10 minutes.
Step 4
Cook the fettuccine in a large pot of boiling salted water according to package instructions. Add the broccoli 2 minutes before the cooking time is up.
Step 5
Drain, add the tofu mixture, and toss well. Serve with lime wedges and celery.
