  • Sesame Oil - 0 fl oz
  • Oyster Mushrooms - 1 fl oz
  • Minced garlic - 0.3 oz
  • Shallot - 0.6 oz
  • Tomatoes - 0.2 oz
  • Avocado - 0.1 oz
  • Olive Oil - 4 fl oz
  • Spanish onions - 0.9 oz
  • Salt - to taste
  • Sweet Chili Sauce - 3 fl oz
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Chop the sea bass, shrimp, and squid. You can pass them through a meat grinder for this.

Step 2

Prepare the dressing. In a separate bowl, mix lime juice with olive oil, pepper, and salt.

Step 3

In a large salad bowl, thoroughly mix the chopped fish with shallots, garlic, lime leaves, cilantro, red curry paste, egg (if the mixture is too wet), oyster sauce, and sesame oil. Add sugar, salt, and pepper.

Step 4

Shape small round flat patties weighing 60 grams each.

Step 5

Pour olive oil into a hot skillet and fry the patties on both sides for 3-5 minutes until cooked through.

Step 6

Serve the patties with salad and sauce poured into a small bowl.
