Ingredients
- Peanut Butter - 2.1 oz
- Lime Juice - 2½ teaspoons
- Soy Sauce - 2½ teaspoons
- Brown Sugar - 2 teaspoons
- Grated Ginger - 1½ teaspoons
- Minced garlic - 1 clove
- Beets - 2 pieces
- Carrots - 2 pieces
- Cucumber - 1 piece
- Yellow bell pepper - 1 piece
- Fresh Mint - 0.9 oz
- Cilantro - 0.9 oz
- Basil - 0.9 oz
- Rice Paper - 12 pieces
Step by Step guide
Step 1
To prepare the sauce, mix all the ingredients and 3 teaspoons of hot water in a small bowl, set aside.
Step 2
Steam the beets for 15 minutes or until a knife easily pierces them.
Step 3
Cool, peel, and cut into matchstick-sized pieces.
Step 4
Place on paper towels in a single layer. Arrange the vegetables in separate piles and mix the herbs together.
Step 5
Fill a large shallow plate with hot water.
Step 6
Dip one sheet of rice paper into it, leave for 6 seconds, gently remove, and place on a clean dry cutting board.
Step 7
Place 1 teaspoon of herbs in the center of the rice paper, add 1 teaspoon of beets, 1 teaspoon of carrots, 3 pieces of cucumber, and 3 pieces of bell pepper.
Step 8
Fold the edges of the sheet towards the center, covering the filling, and roll tightly. Repeat for all sheets. Serve the rolls with dipping sauce.
