Ingredients
- Shallot - 2 pieces
- Vegetable Oil - 1 tablespoon
- Garlic - 3 cloves
- Mild Chili Spice - 1 piece
- Orange Bell Peppers - 1 piece
- Chicken Egg - 1 piece
- Chicken Broth - 3 tablespoons
- Fish Oil - 3 tablespoons
- Red Curry Powder - 1 tablespoon
- Sugar - 1 teaspoon
- Roasted Peanuts - ½ cup
- Rice - 1½ cups
- Pineapple - 7.1 oz
- Peeled Cooked Shrimp - 7.1 oz
- Frozen green bean pods - ¼ cup
- Scallions - 2 stalks
- Chopped Green Onions - ¼ cup
- Raisins - ¼ cup
Step by Step guide
Step 1
Boil the rice in boiling water until cooked. Drain and rinse under cold water.
Step 2
Heat the vegetable oil in a wok over medium heat.
Step 3
Add finely chopped shallots, minced garlic, finely chopped chili, and bell pepper, and sauté until fragrant, about one minute.
Step 4
Add the lightly beaten egg and sauté for another minute.
Step 5
Add the broth, fish sauce, curry powder, and sugar. Cook for one minute.
Step 6
Add the nuts and cook for 30 seconds.
Step 7
Then add the rice, break up any clumps, and cook for a few minutes.
Step 8
Add the diced pineapple, shrimp, peas, and raisins. Mix well.
Step 9
Remove from heat and serve, garnished with chopped green onions and cilantro.
