Ingredients

- Mango - 1.8 oz
- Lime - 1 piece
- Okra - 1.8 oz
- Asparagus - 1.1 oz
- Courgette - 1.4 oz
- Celery stalk - 0.7 oz
- Marinated cherries - 1.4 oz
- Orange Bell Peppers - 1.8 oz
- Grated Ginger Root - 0.5 oz
- Mild Chili Spice - 1 piece
- Spanish onions - 1.1 oz
- Cardamom - 0 oz
- Cinnamon - 0 oz
- Pad Thai Sauce - 2.8 oz
Step by Step guide
Step 1
Cut the salmon steaks into 4 pieces and sear them on high heat for 2 minutes on each side.
Step 2
Bake the salmon in the oven for 5 minutes at 356°F.
Step 3
Dice the bell pepper, onion, mango, zucchini, and celery into large 2x2 cm cubes, and cut the asparagus into three pieces.
Step 4
Zest the lime, peel and slice the ginger thinly, and cut 2 thin slices of the chili pepper.
Step 5
In a hot pan, sauté the bell pepper, celery, onion, zucchini, asparagus, and mango sequentially for 3–4 minutes in olive oil.
Step 6
Add the Thai sauce, okra, cinnamon, star anise, cardamom, squeeze the juice from half a lime, add the lime zest, chili pepper, and ginger, season with salt, and simmer for 2 minutes; at the end of cooking, add the halved cherry tomatoes.
Step 7
Place the vegetables without sauce on a plate, top with the pieces of salmon, drizzle with the remaining sauce from the pan, and serve.
