Thai Shrimp Stir-Fry
Ingredients
- Olive Oil - 3 tablespoons
- Onion - 1 head
- Eggplants - 8.8 oz
- Red Curry Powder - 1 tablespoon
- Peeled Cooked Shrimp - 7.1 oz
- Fish Oil - 7 fl oz
- Coconut Milk - 10 fl oz
- Chopped Green Onions - 3 tablespoons
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Thinly slice the onion and cut the eggplant into large pieces.
Step 2
In olive oil, sauté the onion until golden. Add the eggplant and fry for another 5 minutes.
Step 3
Add the curry paste, stir, and sauté for 1 minute.
Step 4
Pour in the coconut milk and fish broth, bring to a boil, and cook for 5 minutes.
Step 5
Add the shrimp and season well with salt and pepper. Cook until the shrimp are done, about 2 minutes.
Step 6
Add the herbs, stir, and serve in warmed ceramic bowls.
