Thai-Style Rice Noodles with Shrimp and Vegetables

Ingredients

  • Rice Noodles - 7.1 oz
  • Onion - 1 head
  • Carrot - 1 piece
  • Garlic - 2 cloves
  • Chicken Egg - 2 pieces
  • Napa Cabbage - 1 piece
  • Shrimp - 12.3 oz
  • Olive Oil - 3 spoons
  • Chicken Broth - ¼ glasses
  • Soy Sauce - 4 spoons
  • Yakiniku sauce - 2 spoons
  • Sugar - 1 tablespoon

Step by Step guide

Step 1

Cook the Chinese noodles according to the instructions (usually about 3 minutes), then drain all the water and set aside until needed (about 10 minutes).

Step 2

In a skillet over high heat, heat 1 teaspoon of olive oil until hot, then slowly pour in the beaten eggs in a thin stream, quickly scramble them, and transfer to a separate plate.

Step 3

Slice the onion into half-rings, and cut the carrot and cabbage into thin strips.

Step 4

In a large skillet or pot (with a thick bottom), heat 2 teaspoons of oil over high heat and sauté the onion, garlic, and carrot for 3–4 minutes, or until the onion is golden brown.

Step 5

Add the cabbage and sauté for another 2–3 minutes.

Step 6

Transfer all the vegetables to a plate separately, or simply push the vegetables to one side.

Step 7

Pour 1 tablespoon of oil into the same skillet (or pot) and sauté the shrimp until golden brown.

Step 8

Once the shrimp are sautéed and have taken on a beautiful color, combine the vegetables, eggs, shrimp, and noodles. Stir everything well and add soy sauce, teriyaki sauce, sugar, and broth. Mix well and sauté for an additional 2 minutes.
