Ingredients
- Garlic - 1 clove
- Ground coriander - 1 bunch
- Fresh Mint - 1 bunch
- Lemongrass - 1 stalk
- Mild Chili Spice - a pinch
- Coconut Liqueur - 8 fl oz
- Vegetable Oil - 1 tablespoon
- Carrot - 2 pieces
- Red Long Chili Peppers - 1 piece
- Broccoli - 2.6 oz
- Fresh Mushrooms - 1.8 oz
- Egg noodles for wok - 8.8 oz
- Scallions - 4 pieces
Step by Step guide
Step 1
In a blender, combine the finely chopped garlic, sliced lemongrass stalk, coriander, mint, and chili. Pour in the oil and blend until smooth. Transfer to a preheated pot and cook over heat for 1-2 minutes.
Step 2
Pour in the coconut cream and bring to a boil. Add the sliced carrots, julienned bell peppers, broccoli, and sliced mushrooms. Cook, stirring, for 4–5 minutes until all the vegetables are tender.
Step 3
Add the vermicelli and finely chopped green onions, mix well, and cook for another 1-2 minutes. Transfer to serving plates and serve.
