Ingredients

  • Water - 8 fl oz
  • Wheat Flour - 8.5 oz
  • Dry yeast - 0.2 oz
  • Sugar - 0.2 oz
  • Salt - 0.4 oz
  • Safflower Oil - 1 fl oz
  • Passata Tomato Sauce - 3 fl oz
  • Potato - 1 piece
  • Spicy salami - 3.5 oz
  • Pickled Chanterelles - 4 pieces
  • Melted Cheese - 10.6 oz

Step by Step guide

Step 1

Prepare the starter: in a small bowl, pour in a glass of warm water, add 1 teaspoon of sugar, a pinch of salt, 1 teaspoon of yeast, and mix in 1 tablespoon of flour.

Step 2

After 10–15 minutes, the yeast will activate (foam will appear), then in a larger bowl, add the remaining flour (about 240 g), salt, sunflower oil, pour in the starter, and knead the dough. It's very important to achieve the right consistency for the dough. It's impossible to say exactly how much flour will be needed because the properties of flour can vary greatly. Each time, flour is added not only by sight but also by feel.

Step 3

The pizza dough should be neither runny nor rubbery, but rather pliable and soft. Place the dough on a floured surface and knead it for at least 10 minutes, adding flour as needed. Grease the dough with vegetable oil, cover it with plastic wrap, and place it in a warm place for 1 to 1.5 hours, or until it has tripled in size. When the dough has risen, divide it into three parts and roll three balls; each part will make a pizza base. On a floured surface, place a ball of dough and shape it into a flat round, dusting it with flour. Preheat a baking sheet greased with olive oil. Preheat the oven to 482°F.

Step 4

To shape the pizza base, do not use a rolling pin; instead, stretch the dough with your fingertips. This method results in a thin center and a thick, crispy crust around the edges. Stretch the pizza by rotating the dough until it forms a thin round.

Step 5

Place the round on the greased baking sheet. Spread the pizza with tomato sauce, using 2 tablespoons for each pizza. Slice the salami, tomato, and mushrooms, and arrange the toppings in a single layer.

Step 6

Sprinkle the pizza with grated cheese and place it in the preheated oven for 10 minutes, or until the cheese starts to brown.

Step 7

The toppings for the pizza can vary widely: sliced fresh or pickled vegetables, such as roasted bell peppers or pickled eggplants, as well as olives, salami, anchovies, or cooked meat.
