Ingredients
- Ground Black Pepper - to taste
- Cream - 1 fl oz
- Red Currant - 14.1 oz
- White Cabbage - 14.1 oz
- Salt - to taste
- Green Papaya - 14.1 oz
- Walnuts - 1.8 oz
- Raisins - 1.8 oz
- Malt Vinegar - 5 tablespoons
- Meyer Lemon Juice - 2 tablespoons
- Apple - 1 piece
- Mustard Greens - 1 tablespoon
- Olive Oil - 2 tablespoons
Step by Step guide
Step 1
Separate the cabbage into leaves, remove the ribs, and finely shred separately.
Step 2
Drizzle the red cabbage with wine vinegar to preserve its color.
Step 3
Toast the walnuts in a dry skillet.
Step 4
Prepare the vinegar dressing. To do this, dilute the mustard in the wine vinegar, gradually add the olive oil, and whisk. Add salt and ground black pepper.

Prepare the cream dressing separately. Whisk the mustard with the cream until smooth, season with salt, and add a pinch of pepper.
Step 6
Place the white and green cabbage in a salad bowl.

Mix the red cabbage with the vinegar dressing.

Combine the white cabbage with half of the cream dressing and sprinkle with raisins.
Step 9
For the green cabbage, dice the apple and mix it with lemon juice.

Mix the green cabbage with the remaining cream dressing.
Step 11
Arrange the three types of cabbage on a plate without mixing and refrigerate for 1 hour.
