- Olive Oil - 3 tablespoons
- Basil leaves - 1 bunch
- Avocado - 1 piece
- Lemon Juice - 1 tablespoon
- Mozzarella Cheese - 4.4 oz
- Tomatoes - 7.9 oz
- Pizza dough - 6.2 oz
Step by Step guide
Step 1
Preheat the oven to its maximum setting. In a large bowl, mix the baking mix, pour in 125 ml of warm water and 1 tablespoon of olive oil, then stir well to form a sticky dough. Knead for a few minutes, adding more dry mix to prevent sticking. Place in an oiled bowl, cover with a kitchen towel, and let it sit in a warm place for 15 minutes.
Step 2
While the dough is rising, blend the remaining oil with the basil. Mix the avocado with lemon juice, then break the mozzarella into large pieces.
Step 3
Roll out the dough into a rectangle measuring 25 x 30 cm. Place it on a large baking sheet. Brush the basil oil over the dough, crumble the mozzarella and tomatoes on top, then bake for 10-12 minutes until crispy and the cheese is melted.
Step 4
Serve with slices of avocado and remaining basil, then season with freshly ground pepper.
