Thyme-Glazed Ribs
Ingredients
- Thick Beef Rib - 2 lbs
- Ocean salt - 0.3 cups
- Leek - 1 piece
- Star anise - 5 pieces
- Dried Chili Pepper - 2 teaspoons
- Thyme - 8 pieces
- Thyme - 2 stems
- Onion - 16.9 oz
- Carrot - 4 pieces
- Honey - 17.6 oz
- Malt Vinegar - 1 cup
- Cayenne Pepper - to taste
- Ground Black Pepper - to taste
- Green peppercorns - 2 teaspoons
Step by Step guide
Step 1
Cut each rib strip into 2 pieces and place them in a large pot. Pour cold water over the ribs until they are submerged. Add salt. Bring to a boil over medium heat. Skim off the foam. Once the foam stops appearing, strain the broth and pour it back into the pot.
Step 2
Meanwhile, clean and wash the leek. Place the star anise, chili pepper, black peppercorns, and 4 sprigs of thyme on a square piece of cheesecloth and tie it up.
Step 3
Put the pot with the broth and ribs back on the heat. Add the herb bundle, leek, chopped onion, carrot, 1 cup of honey, and vinegar. Cover the pot, bring to a boil, and let it simmer on low heat. Cook for 45 minutes. The meat should become tender but not fall off the bones. Then remove the pot from the heat. Let the ribs cool in the broth.
Step 4
Preheat the oven to 392°F. Line a baking sheet with parchment paper. Remove the ribs from the pot and pat them dry with paper towels.
Step 5
Heat the remaining 1/2 cup of honey in the microwave. Add cayenne pepper. Brush the mixture onto the ribs. Sprinkle with thyme leaves, salt, and black pepper. The ribs should be placed bone-side down.
Step 6
Bake the ribs for 30 minutes at 392°F. The honey mixture should caramelize and shine.
Step 7
When serving, the rib strips can be cut into individual ribs. Arrange the ribs on a plate, brush with the remaining honey, and garnish with the remaining thyme sprigs. Enjoy your meal!
