Ingredients
- Thymus gland - 14.1 oz
- Ground Black Pepper - to taste
- Chinese green beans - 7.1 oz
- Wheat Flour - 2 spoons
- Butter - 6.2 oz
- Shallot - 1 head
- Oyster Mushrooms - 7.1 oz
- White Vermouth - 1 fl oz
- Olive Oil - 2 spoons
- Chicken Broth - 8 fl oz
- Coarse Salt - to taste
Step by Step guide
Step 1
Bring water to a boil in a small saucepan. Add salt, toss in the beans, and cook for about four minutes. Drain in a colander and cool under cold running water. Place in a container with cold water and set aside for a while.
Step 2
Blanch the thymus gland, cool it down, and slice it into uniform pieces. Season with salt and pepper. Toss with flour.
Step 3
In a skillet over medium heat, melt a tablespoon of butter. Add finely chopped shallots and sauté until soft, stirring occasionally. Add coarsely chopped oyster mushrooms, increase the heat, and fry for one minute. Pour in white wine, stir, and then transfer the mixture to a bowl.
Step 4
Wipe the skillet with paper towels, add the remaining butter along with the olive oil, and heat over medium heat. Add the iron slices and sauté until golden brown on all sides for about ten minutes. Transfer to a plate lined with paper towels.
Step 5
Pour the broth into a skillet, bring to a boil, deglaze, reduce by half, add the mushrooms, beans, and gizzard. Gently stir. Portion onto plates and serve.
