Timballo of Rice and Orzo with Apples in Curry and Beans

Ingredients

  • Rice - 8.1 oz
  • Orzo Pasta - 6 oz
  • Apple - 5.6 oz
  • Fava Beans - 5.6 oz
  • Milk - 3 fl oz
  • Butter - 1.4 oz
  • Grated Pecorino Pepato Cheese - 1.4 oz
  • Red Curry Powder - 1 tablespoon
  • Black sesame seeds - 1 tablespoon
  • Olive Oil - 8 tablespoons
  • Salt - to taste
  • Water - 27 fl oz
  • Corn Starch - 0.2 oz

Step by Step guide

Step 1

Sauté the orzo (pasta shaped like rice grains) in olive oil (1 tablespoon). When it changes color to brown, add the rice and sauté for one minute. Add boiling water, cover with a lid, reduce the heat to low, and cook for 15 minutes.

Step 2

Remove from heat and add the butter and grated Parmesan. Grease a conical timballo mold (diameter 16 cm, height 10 cm, minimum diameter 12 cm) with olive oil. Place the rice and orzo mixture into the mold and let it cool for 10 minutes.

Step 3

Bring the milk to a boil, add the cornstarch previously dissolved in 1 tablespoon of cold water, curry, a pinch of salt, and cook for two minutes. Remove from heat and add the diced apples.

Step 4

Boil the fava beans, remove the skin, and mix with olive oil and sesame seeds.

Step 5

Unmold the timballo onto a plate and garnish with the apples in curry and beans.
