Tocana a la Chikosh
Ingredients
- Onion - 5.3 oz
- Pork Blood - 28.2 oz
- Fat - 3.5 oz
- Red Long Chili Peppers - 0.3 oz
- Semi-Smoked Sausage - 1.8 oz
- Wheat Flour - 1.1 oz
- Green peppercorns - 3.5 oz
- Tomatoes - 2.8 oz
- Sour Cream - 8.8 oz
- Salt - to taste
Step by Step guide
Step 1
Cut the meat (brisket, shoulder) into thin elongated slices. Lightly fry the bacon cut into noodles, add the onion, and while stirring, sprinkle with sweet red pepper, add a little water, and simmer for a few more minutes. Then add the meat, fat, and stew on low heat, stirring occasionally and adding water to replenish the evaporated liquid.
Step 2
At the end of stewing, add the green pepper, tomatoes, and bring to a boil. Then season the dish with sour cream mixed with sautéed flour, and bring to a boil once more. Serve with flour dumplings.
