Ingredients
- Herbed Tofu - 14.1 oz
- Butternut Squash - 2 pieces
- Olive Oil - 1 tablespoon
- Green onion tops - 1 piece
- Coarse Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the grill or barbecue.
Step 2
Cut the tofu, squash, and green onion into small pieces. Transfer to a bowl and add olive oil, along with some salt and pepper. Mix well.
Step 3
Thread pieces of tofu and green onion onto skewers, and thread pieces of squash onto separate skewers.
Step 4
Place the skewers with squash on the grill and cook for 11–13 minutes until done, turning occasionally. Grill the skewers with tofu for about 4–6 minutes, turning occasionally. During grilling, brush with cilantro and ginger sauce (see note).
Step 5
Serve with the remaining sauce.
