Tofu Salad with Green Beans and Shallots

Ingredients

  • Cilantro leaves - 1 bunch
  • Soy Sauce - 3 tablespoons
  • Rice Vinegar - 1½ tablespoons
  • Ginger Root - 1 teaspoon
  • Shallots - 2 heads
  • Red Chili Pepper - 1 piece
  • Canola Oil - 1 fl oz
  • Green Beans - 15.9 oz
  • Soft tofu - 10.6 oz

Step by Step guide

Step 1

In a bowl, mix soy sauce, bean paste, vinegar, ginger, shallots, and chili; gradually add oil and stir until smooth.

Step 2

Bring salted water to a boil in a large pot. Cook the green beans until tender, about 3 minutes; drain and transfer to a bowl.

Step 3

Add half of the prepared dressing and half of the tofu and cilantro; mix by shaking the bowl and transfer to a serving dish. Garnish with the remaining tofu and drizzle with dressing. Sprinkle with cilantro and shallots.
