Ingredients
- Wheat Flour - 8.8 oz
- Baking Powder - 2 teaspoons
- Ground Cumin - 1 teaspoon
- Salt - 2 teaspoons
- Ground Black Pepper - to taste
- Onion - 2 pieces
- Olive Oil - 2 tablespoons
- Marinated cherries - 10.6 oz
- Eggplants - 1 piece
- Cream 22% - 12 fl oz
- Butter - 1.8 oz
- Cheshire Cheese - 1.8 oz
Step by Step guide
Step 1
Peel the onion and eggplant. Finely chop the onion and cut the eggplant into small cubes, season with salt and pepper. Preheat the oven to 392°F. Grease a baking dish with olive oil and add the vegetables. Bake for 15–20 minutes, stirring every 5 minutes. At the end, add the quartered cherry tomatoes.
Step 2
Mix the flour with baking powder, cumin, and salt. Add grated cheese and butter. Rub into crumbs. Add the cream and mix. Drop the dough in small ovals spaced apart on top of the vegetables. Bake for another hour.
