Description
Common mint, species name — fragrant. It grows everywhere.
Ingredients
- Onion - 2 pieces
- Tomatoes - 6 pieces
- Garlic - 4 cloves
- Olive Oil - 1 tablespoon
- Ocean salt - to taste
- Dried Rosemary - 2 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the onion, tomatoes, and garlic.
Step 2
Dice the onion, slice the tomatoes, and mince the garlic.
Step 3
In a saucepan or deep skillet with a thick bottom, sauté the onion in olive oil until soft, add the garlic and cook for another couple of minutes, then add the tomatoes and sauté for one to two minutes.
Step 4
Reduce the heat and let simmer for 5–10 minutes or until the tomatoes are soft.
Step 5
Season with salt and pepper, then blend with an immersion blender until there are still some chunks.
Step 6
Stir in the mint and let it cook on low heat for another minute.
Step 7
Turn off the heat and let it steep for 5–10 minutes.
