Tomato Pearlotto
Ingredients
- Pearl barley - 1 cup
- Crushed tomatoes in their juice - 14.1 oz
- Garlic - 2 cloves
- Fresh Thyme - 10 sprigs
- Fresh Basil - 5 sprigs
- Tomato Paste - 1 tablespoon
- Sugar - 1 teaspoon
- Ground cayenne pepper - ¼ teaspoon
- Grated Parmesan cheese - 5.3 oz
- Olive Oil - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the pearl barley in boiling water until cooked, then drain in a colander.
Step 2
Peel the garlic and finely chop it. Heat olive oil in a deep skillet and sauté the garlic until soft. Add the crushed tomatoes and tomato paste, and mix well.
Step 3
Add the thyme leaves, cayenne pepper, salt, and sugar to the skillet, and simmer for 10 minutes. Then add the pearl barley and simmer, stirring, for another 5 minutes. Finely chop the basil leaves and add them to the pearlotto. Set aside 3 tablespoons of parmesan, and mix the rest into the pearlotto.
Step 4
Serve the pearlotto on plates, sprinkle with the remaining parmesan and black pepper, and drizzle with olive oil. Serve immediately.
