- Tomatoes - 2 lbs
- Salt - ½ tablespoon

Step 1
Select the ripest tomatoes, wash them, cut them in half, place them in a pot, and cook over low heat, stirring occasionally, until a thick homogeneous mass forms.
Step 2
Pass the mixture through a sieve, return it to the pot, and simmer again, stirring, until the puree thickens.
Step 3
Season the resulting puree with salt, cool it down, transfer it to a jar, and cover the top with a thin layer of fat or vegetable oil. Cover the jar with parchment paper and tie it.
