Tomato Salad with Roasted Garlic and Oregano

Ingredients

  • Tomatoes - 8.8 oz
  • Marinated cherries - 8.8 oz
  • Olive Oil - 2 tablespoons
  • Garlic - 2 cloves
  • Oregano - 3 sprigs
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste
  • Pitted olives - ½ cup
  • Balsamic Vinegar - 1 tablespoon

Step by Step guide

Step 1

Cut the tomatoes into small pieces. Halve the cherry tomatoes. Arrange everything on a plate.

Step 2

Heat the oil in a pan over medium heat. Thinly slice the garlic and sauté until golden, being careful not to burn it. Remove from heat (preferably slightly early), let it cool slightly, and add the oregano leaves.

Step 3

Season the tomatoes with salt and pepper. Pour the warm garlic sauce over them. Drizzle with vinegar and sprinkle with finely chopped olives. Toss and serve.
