- Tomatoes - 4 lbs
- Carrot - 3.5 oz
- Passata Tomato Sauce - 1 tablespoon
- Celery salt - 1 stalk
- Spanish onions - 2 heads
- Bay leaf - 1 piece
- Thyme - 0.2 oz
- Leek - 2 stalks
- Parsley - 0.7 oz
- Fresh basil leaves - 0.7 oz
- Sugar - 1 tablespoon
- Bacon - 3.5 oz
- Olive Oil - 0 fl oz
- Butter - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Dice the bacon, carrot, onion, and celery into small cubes. In olive oil, first sauté the bacon, then, when it starts to brown, add the vegetables. Cook until they begin to caramelize slightly. Add the leeks, sliced into thin rings, and sauté for three to four minutes. Finely chop half of the tomatoes (the other half should be chopped coarsely) and stir them into the bacon.
Step 2
Sauté, stirring, over medium heat for five to seven minutes. Then add a bouquet of bay leaves, thyme sprigs, and parsley stems. Add tomato paste and sugar, reduce the heat to low, and simmer, stirring, for another ten minutes.
Step 3
Add the coarsely chopped tomatoes to the pot, gently stir, and simmer for another six minutes. Incorporate the chopped parsley leaves and fresh basil.
Step 4
Melt a piece of butter in a pot, season with salt and pepper, stir, and serve as a main dish or as a side.
