Description

Traditional falafels

Ingredients

  • Chickpea - 1 cup
  • Activated Baking Soda - ½ teaspoon
  • Leek - 1 piece
  • Parsley - 2.5 oz
  • Garlic - 3 cloves
  • Meyer Lemon Juice - 1 tablespoon
  • Ground Cumin - 1 teaspoon
  • Salt - ½ teaspoon
  • Ground Black Pepper - ¼ teaspoon
  • Barbecue sauce - ¼ teaspoon
  • Vegetable Oil - 2 cups

Step by Step guide

Step 1

Pour the chickpeas and ½ teaspoon of baking soda into a large bowl, add 3 to 4 cups of water. Let soak for 24 hours. Drain the water.

Step 2

Combine the chickpeas, the remaining ⅓ teaspoon of baking soda, leek, parsley, garlic, lemon juice, cumin, salt, pepper, and hot sauce (to taste) in a food processor bowl. Process for 30 seconds to 1 minute until a paste forms.

Step 3

Form a tight ball from 1 teaspoon of the mixture, squeezing out excess moisture, and place it on a plate. Repeat with the remaining mixture.

Step 4

Heat the oil to 180°C (356°F) in a skillet over medium heat. Place 12 falafel balls and fry for 1 to 2 minutes until golden brown on the bottom. Flip and cook for another 1 to 2 minutes until golden brown on the other side. Transfer to a paper towel to remove excess oil. Repeat with the remaining balls.
