Traditional tabouli with cilantro
Ingredients
- Bulgur - 4.4 oz
- Tomatoes - 4 pieces
- Scallions - 4 stalks
- Fresh Mint - 10 stalks
- Olive Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Cilantro - 1 bunch
- Lemon - 1 piece
Step by Step guide
Step 1
Cook the bulgur according to the instructions on the package. Turn off the heat and let it cool covered, so the bulgur absorbs all the moisture.
Step 2
Finely chop the tomatoes, preferably plum tomatoes (not watery).
Step 3
Chop the herbs as finely as possible. Use only the mint leaves. The cilantro stems without roots can also be used.
Step 4
In a salad bowl, mix the cooked bulgur, tomatoes, and chopped herbs.
Step 5
For the dressing, whisk the juice of 1 lemon with olive oil and pour this mixture over the tabouli.
Step 6
Let it sit for 10–30 minutes. Season with salt and pepper to taste.
Step 7
Serve with pita and/or falafel.
