Recipe taken from the book by John Smith 'Armenian Cuisine' (1960).
Ingredients
- Trout - 7.1 oz
- Apple Wine - 1 fl oz
- Lemon - 0.4 oz
- Pomegranate Seeds - 1.9 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Tarragon - to taste
- Scallions - to taste
Step by Step guide
Step 1
Place small clean sticks crosswise at the bottom of a pot, pour in the white grape wine: lay the prepared trout, sprinkled with salt, on the sticks in 2–3 layers.
Step 2
On top of the fish, place coarsely chopped tarragon leaves and green onion.
Step 3
Cover the pot with a lid and simmer the fish over low heat for 18–20 minutes.
Step 4
Serve the trout hot.
Step 5
Serve lemon or pomegranate seeds separately.
