Ingredients

  • Tarragon - 1 bunch
  • Trout - 2 lbs
  • Lemon - 1.4 oz
  • Dry White Wine - 1 cup
  • Basil - 1 bunch
  • Scallions - 1 bunch
  • Ground Black Pepper - to taste
  • Salt - to taste

Step by Step guide

Step 1

Clean the Sevan trout, removing the insides, and rinse well. Season each fish with salt and pepper.

Step 2

Place wooden sticks (you can use chopsticks) at the bottom of a deep and wide saucepan to raise the depth of the container by at least 1.5 cm.

Step 3

Layer the fish on the sticks. Top with tarragon and other herbs. Drizzle with lemon juice. Then place another layer of fish, drizzle with lemon juice again, and cover with herbs. Pour in the wine and let it flow to the bottom. Cover the saucepan with a lid and place it on the heat. Leave for 20 minutes.

Step 4

You can easily determine the fish's readiness by the skin: if it flakes off when touched with a wooden spatula, the dish is ready.
