Ingredients
- Trout - 3 lbs
- Cotton Oil - 17 fl oz
- Serrano Chili - 6 pieces
- Wheat Flour - 1.4 oz
- Chopped almonds - 8 tablespoons
- Smoked Ham on the Bone - 3.5 oz
- Garlic - 3 cloves
- Chopped Sage Leaves - 1 tablespoon
- Medium-dry sherry - 2 tablespoons
- Lemon - 1 piece
- White Pepper (whole) - to taste
- Salt - to taste
Step by Step guide
Step 1
Season the trout with salt and pepper.
Step 2
In a skillet, heat the oil and sauté the serrano ham, turning once, for 1–2 minutes. Remove the ham, let excess fat drain, and dry. Place a piece inside each fish.
Step 3
Dredge the trout in flour, shaking off the excess, and fry in the skillet on all sides until golden brown.
Step 4
Preheat the oven to 392°F. Transfer the fish to a baking dish, arranging them in a single layer.
Step 5
In a small skillet, pour in 120 ml of corn oil, heat it, and sauté the chopped ham, chopped almonds, finely chopped garlic, and parsley. Cook for 5 minutes until the garlic and almonds are lightly browned. Stir in the sherry and lemon juice and drizzle the sauce over the trout.
Step 6
Bake for 10 minutes and serve immediately without removing from the dish.
