Ingredients
- Trout - 2 lbs
- Canned Peaches - 10.6 oz
- Mild Chili Spice - 1 piece
- Serrano Chili - 4 slices
- Olive Oil - 3 tablespoons
- Garlic - 1 clove
- Salt - to taste
- Champagne Vinegar - 1 tablespoon

Preheat the oven to 392°F. Gut the trout, season with salt and pepper. Cut the red peppers into strips lengthwise, and the chili crosswise. Divide the peppers and place them on 4 slices of ham, then wrap them. Place the ham rolls inside the trout.
Step 2
Place the trout in a heavy-bottomed roasting pan in a single layer. Drizzle with olive oil and sprinkle with minced garlic. Season with salt and bake for 12 minutes until cooked through (the flesh should flake easily). Transfer the trout to a warmed serving dish. Add vinegar or lemon juice to the pan and bring to a boil, then drizzle over the trout and serve immediately.
