- Wheat Flour - 7.1 oz
- Non-alcoholic sparkling wine - 3 fl oz
- Olive Oil - 0 fl oz
- Dry yeast - 0.1 oz
- Black truffles - 0.4 oz
- Sugar - ½ teaspoon
- Black Bean Paste - 2.8 oz
- 33% Cream - 0 fl oz
- Garlic - 1 clove
- Truffle Oil - 0 fl oz
- Melted Cheese - 5.3 oz
Step by Step guide
Step 1
Sift the flour, pile it on the table, and make a well in the center. In the sparkling mineral water, add the yeast, sugar, a little flour, and mix thoroughly. Let it sit for 20-30 minutes.
Step 2
Pour the resulting mixture into the flour, knead the dough until a homogeneous mass is formed, adding olive oil during the kneading process. Shape the dough into a ball, cover with a damp cloth, and let it rest at room temperature for 30 minutes. Then divide the dough into portions of 150-200 g and let it rest for another hour. The dough can be frozen.
Step 3
Roll out the dough from one portion into a circle with a diameter of about 35 cm. Place 100 g of sauce in the center of the pizza and distribute the mozzarella cheese cut into pieces over the pizza.
Step 4
Bake the pizza in a wood-fired oven at a temperature of 320-350°C. Remove the pizza, place it on a surface, and cut it into the desired number of slices. Before serving, drizzle with truffle oil.
