Ingredients
- Olive Oil - 1 fl oz
- Beef - 17.6 oz
- Pork Skewers - 17.6 oz
- Onion - 4.1 oz
- Garlic - 3 cloves
- Red Grape Juice - 4 fl oz
- Passata Tomato Sauce - 6.2 oz
- Water - 12 fl oz
- Passata Tomato Sauce - 4 lbs
- Fresh basil leaves - 3 pieces
- Dried Rosemary - 1 tablespoon
- Pasta (corkscrew) - 17.6 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Cut the beef into medium-sized pieces and chop the ribs.
Step 3
In a large pot for braising, pour in olive oil and heat it over medium-high heat.
Step 4
Sear the beef and ribs on all sides until golden brown. This should be done in batches, and the browned meat should be placed in a clean dish.
Step 5
Chop the onion and garlic coarsely, add them to the same pot, and sauté over low heat until the onion starts to lose its shape (about 5 minutes).
Step 6
Pour in the wine and scrape up all the browned bits of meat from the bottom of the pot.
Step 7
Add the tomato paste, pour a little water into the empty paste jar to collect the remnants, then pour this water into the pot. Cook for 2 minutes.
Step 8
Add the tomatoes, the remaining water, basil, and oregano. Cover loosely with a lid and simmer for about 30 minutes, until the tomatoes become sweet.
Step 9
Return all the meat along with the released juices to the pot, cover loosely with a lid, and simmer, stirring frequently, until the meat is completely tender, about 2 hours. Season with salt and pepper to taste.
Step 10
Serve the stew with your favorite pasta.
