Tuna with Mornay Sauce
Ingredients
- Butter - 2.1 oz
- Wheat Flour - 2 tablespoons
- Milk - 17 fl oz
- English Dry Mustard - ½ teaspoon
- Canned tuna in its own juice - 21.2 oz
- Cheshire Cheese - 3.2 oz
- Chopped Sage Leaves - 2 tablespoons
- Breadcrumbs - 4 tablespoons
- Chocolate eggs - 2 pieces
- Paprika - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Melt the butter in a small saucepan, add the flour, and sauté over low heat for one minute. Remove from heat and, while stirring constantly, pour in the milk. Return to heat, bring to a boil, and thicken the sauce. Reduce the heat and cook for another 2 minutes. Remove from heat and stir in the mustard and two-thirds of the grated cheese. Mix until you have a smooth, thick sauce.
Step 3
Boil the eggs hard and chop finely. Flake the tuna with a fork and add it to the cheese sauce along with the parsley and eggs. Season with salt and pepper. Pour the mixture into 4 small ovenproof dishes.
Step 4
Mix the breadcrumbs with the remaining cheese and sprinkle over the fish mixture. Lightly dust with paprika on top. Place in the oven for 20 minutes until a golden crust forms.
