Ingredients
- Oranges - 2 pieces
- Orange Bell Peppers - 1 piece
- Spanish onions - ½ head
- Chopped Sage Leaves - 0.7 oz
- Red Wine Vinegar - 1 tablespoon
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 1 tablespoon
- Pompano fillet - 14.1 oz
- Ground coriander - 1 teaspoon
- Banana Leaves - to taste
Step by Step guide
Step 1
Peel the oranges and slice them thinly, then dice. Remove the seeds from the pepper and cut it into small cubes. Finely chop the onion.
Step 2
For the salsa, combine the oranges, pepper, onion, mint, and vinegar in a bowl. Season with salt and pepper.
Step 3
Preheat the grill and lightly brush it with oil.
Step 4
Brush the tuna with oil, season with salt and pepper. Place it on the grill and cook until browned on the outside but pink in the center, about 4–6 minutes, flipping once.
Step 5
Place the tuna on plates and top with the salsa. Garnish with lettuce leaves.
