Ingredients

  • Tuna - 6 oz
  • Cucumbers - 1.4 oz
  • Watermelon - 3.5 oz
  • Kimchi Pasta - 2.1 oz
  • Celery stalk - 0.7 oz
  • Mint - 0.1 oz
  • Lime Juice - 0 fl oz
  • Salt - 0.2 oz
  • Egg white - 2 pieces
  • Dijon Mustard - 1.1 oz
  • Vegetable Oil - 9 fl oz
  • Watermelon - 3.5 oz
  • Ground Black Pepper - 0 oz
  • Spanish onions - 0.2 oz

Step by Step guide

Step 1

In a bowl, mix the watermelon flesh with diced watermelon and celery. Add kimchi sauce and chopped mint, stir, then add lime juice and salt.

Step 2

To prepare the watermelon sauce, place 2 egg yolks, Dijon mustard, vegetable oil, watermelon juice, lime juice, 20 grams of kimchi sauce, and salt in a blender. Blend until smooth.

Step 3

Dice the tuna into small cubes.

Step 4

Peel the cucumber and slice it thinly, then roll the slices into a tube.

Step 5

Finely chop the red onion.

Step 6

Take an oval plate and arrange the tuna cubes, add salt and pepper. Top with 20 grams of watermelon salad and sprinkle with red onion.

Step 7

Drizzle with watermelon sauce to taste.
