Ingredients

  • Blue Ling Fillet - 31.7 oz
  • Onion - 8.5 oz
  • Garlic - 6 cloves
  • Chopped Sage Leaves - 3 tablespoons
  • Cilantro - 3 tablespoons
  • Ground Cumin - 1 tablespoon
  • Coarse Salt - 2 teaspoons
  • Grated Ginger Root - 1 teaspoon
  • Ground Black Pepper - ¾ teaspoon
  • Matzah - 6 tablespoons
  • Olive Oil - 12 tablespoons
  • Chicken Egg - 1 piece

Step by Step guide

Step 1

Line a large baking sheet with plastic wrap.

Step 2

In a food processor, grind the fish into a paste. Add finely chopped onion, minced garlic, parsley, cilantro, cumin, salt, ginger, and black pepper. Mix well and add the matzah ground to flour and the egg. Mix again thoroughly.

Step 3

With wet hands, shape the mixture into patties, using about 1 tablespoon of mixture for each. Place them on the baking sheet.

Step 4

Heat 3 tablespoons of olive oil in a large skillet over medium heat. Fry the patties in batches until cooked through and golden brown, about 3 minutes on each side.

Step 5

Arrange on plates and serve with aioli.
