Tunisian Red Snapper
Ingredients
- Toasted Cumin Seeds - ½ teaspoon
- Coriander essential oil - ½ teaspoon
- Snapper - 7.1 oz
- Red Long Chili Peppers - ½ teaspoon
- Garlic - 3 pieces
- Onion - 1 piece
- Tomatoes - 2 pieces
- Raisins - 4.4 oz
- Pistachios - 2.1 oz
- Fish Oil - 8 fl oz
- Parsley - to taste
Step by Step guide
Step 1
Preheat the oven to 200°C.
Step 2
In a large skillet, lightly heat and sauté the cumin seeds, coriander seeds, and sliced peppers for 2-3 minutes until fragrant.
Step 3
Then remove the skillet from heat and crush the spices using a mortar and pestle.
Step 4
Rub this mixture onto the fillet.
Step 5
Let it marinate for 10 minutes.
Step 6
In a small bowl, mix together the garlic, onion, chopped tomatoes, raisins, and pine nuts.
Step 7
Using a tablespoon, place this vegetable mixture in a greased flat baking dish and place the fillet on top of the vegetable layer.
Step 8
Top the fillet with the remaining vegetable mixture.
Step 9
Pour the fish broth over the fillet.
Step 10
Bake for 20-30 minutes until the fillet is fully cooked.
Step 11
Serve the fillet garnished with parsley.
