  • Duck wings - 2 lbs
  • Onion - 1 head
  • Herbs - to taste
  • Green peppercorns - 0.2 oz

  • Bay leaf - 3 pieces
  • Salt - to taste

Prepare the necessary ingredients.

Wash the meat thoroughly under running water. Remove any excess. Cut into pieces for easy placement in the pot.

Place the meat in the pot and cover with water.

Put the pot with the meat on the stove.

Cover the pot with a lid and bring to a boil.

Boil the meat for about 7–10 minutes over medium heat.

Drain the first broth and wash the meat thoroughly under running water.

Return the meat to the pot, cover with water, and add salt to taste.

Add 1 large onion, 2 bay leaves, 5 allspice berries, and 5 black peppercorns to the pot with the meat.

Cover the pot with a lid, bring to a boil, and skim off any foam if necessary. Reduce the heat to low to let the meat simmer in the broth. Cook for about 5 hours.

Carefully transfer the cooked meat to a container using a slotted spoon to cool slightly.

Strain the broth through a colander.

Separate the cooled meat from the bones, remove any excess, and shred or cut into convenient pieces.

Place the prepared turkey meat at the bottom of a mold. You can also use baking molds, adding herbs or berries at the bottom, lining the mold with plastic wrap (flatten as much as possible) for easy removal of the finished aspic onto a plate.

Pour hot broth over the meat. Let cool at room temperature. Refrigerate for at least 8–9 hours to set.
