Ingredients
- Wheat Flour - 12.5 oz
- Chicken Egg - 1 piece
- Milk - 7 fl oz
- Vegetable Oil - 1 fl oz
- Butter - 2.8 oz
- Spanish onions - 3.5 oz
- Garlic - 2 cloves
- Dill - 0.7 oz
- Parsley - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Allspice berries - 5 pieces
- Bay leaf - 1 piece
- Sour Cream - to taste
- Herbs - to taste
- Pork Mince - 15.9 oz
Step by Step guide
Step 1
Prepare all the ingredients. Place the butter in the freezer.
Step 2
Sift the flour into the mixing bowl, then add the egg, milk, vegetable oil, and a pinch of salt.
Step 3
Knead the dough with a hook attachment. Once all the ingredients are combined, finish kneading the dough by hand on the countertop.
Step 4
Place the dough on a clean, lightly floured surface and fold it several times, pressing down with your full body weight. Then shape the dough into a ball by tucking the edges underneath, wrap it in plastic wrap, and refrigerate while preparing the filling.
Step 5
Finely chop the white onion, and finely chop the parsley and dill.
Step 6
Grate the chilled butter (40 g) using a fine grater.
Step 7
Add the turkey mince, along with oil, onion, and garlic that has been pressed. Also, add the herbs, reserving a little for garnishing.
Step 8
Season the minced meat with salt and pepper, and add a little water, about 30–50 ml. Mix everything well. The water is needed to create broth inside the dumplings.
Step 9
Roll out the dough into a thin layer and cut out circles using a glass or a pastry ring. Gather the scraps of dough into a ball and cover with plastic wrap.
Step 10
Spoon the filling onto the circles of dough, fold the dough in half, and pinch the edges tightly.
Step 11
Pinch the corners of the dough together to form a round dumpling. Shape all the dumplings in the same way. You can place them on a floured dish and freeze them for future use.
Step 12
In a large pot, bring water to a boil, adding salt, bay leaf, and allspice.
Step 13
Add the dumplings to the boiling water, bring it back to a boil, wait for them to float to the surface, and then cook for an additional 3-5 minutes.
Step 14
Place the turkey dumplings on a plate or a serving dish, mix with butter and garnish with chopped herbs. Serve with sour cream.
