Turkey in Champagne with Provencal Herbs
Ingredients
- Chicken fillet - 21.2 oz
- Onion - 1 piece
- Dry Champagne - 12 fl oz
- Salt - to taste
- Herbes de Provence - 2 tablespoons
- Ground Black Pepper - to taste
- Vegetable Oil - 4 tablespoons
- Butter - 1 tablespoon
- Garlic - 3 cloves
- Wheat Flour - 1 tablespoon
Step by Step guide
Step 1
Heat the butter and vegetable oil well.
Step 2
Sear the turkey breast on all sides. Remove and set aside.
Step 3
Finely chop the onion, peel and crush the garlic with the flat side of a knife. Sauté the onion and garlic in the remaining oil.
Step 4
In a deep pot with a thick bottom, place the sautéed mixture, then the turkey, pour in the champagne, season with salt and pepper, and sprinkle with Provencal herbs.
Step 5
Tightly cover with a lid, you can even weigh it down with something heavy, and place the pot on the very lowest heat for about two to two and a half hours!
Step 6
Remove the turkey from the pot, and blend the remaining mixture with a spoonful of flour until smooth.
Step 7
Cut the turkey into serving pieces, drizzle with the sauce, and serve.
