Description
This dish should be served with lightly salted rice to complement the pleasant taste of the mild curry and the subtle aroma of coconut oil and spices.
Ingredients
- Chicken fillet - 2 lbs
- Olive Oil - 5 teaspoons
- Coconut Milk - 2 spoons
- Red Curry Powder - 0.5 oz
- Leek - 1 piece
- Spices - 3 spoons
- Tomatoes - 1 piece
- Natural Yogurt - 12 fl oz
Step by Step guide
Step 1
Place the well-washed and diced turkey fillet into a preheated skillet with a small amount of olive oil, and let it sauté.
Step 2
Meanwhile, prepare the sauce by pouring 3 tablespoons of olive oil into a saucepan, adding finely chopped onion, and lightly sautéing it.
Step 3
Peel a large tomato by blanching it in boiling water, then chop it finely and add it to the onion.
Step 4
Add the spices and coconut oil.
Step 5
Don't forget about the turkey; turn it over and make sure it is evenly browned to a light golden crust on both sides.
Step 6
In the pot with the onions and tomatoes, add the yogurt and heat gently, then add the browned pieces of turkey and let simmer on low heat for 45–60 minutes.
Step 7
That's it, just plate it up and add a little sauce.
