Turkey skewers with yogurt dressing and cucumber salad

Ingredients

  • Ground coriander - ½ bunch
  • Chicken fillet - 3 pieces
  • Garlic - 3 cloves
  • Toasted Cumin Seeds - 2 tablespoons
  • Lemon - 1 piece
  • Olive Oil - 2 tablespoons
  • Grated Ginger Root - 1 piece (about 1 cm)
  • Paprika - ½ tablespoon
  • Turmeric - 1 tablespoon
  • Tahini - 1 tablespoon
  • Natural Yogurt - 2 tablespoons
  • Meyer Lemon Juice - 1 tablespoon
  • Spanish onions - ½ head
  • Cucumbers - 2 pieces

Step by Step guide

Step 1

Crush two cloves of garlic using a garlic press or grate them on a fine grater.

Step 2

Toast 2 tablespoons of cumin seeds in a dry skillet until fragrant and grind them in a mortar with a pinch of coarse salt.

Step 3

Peel a piece of ginger about 1 cm long and also grate it on a fine grater.

Step 4

Mix the garlic and ginger with the grated zest of 1 lemon, juice of half a lemon, 1.5 tablespoons of olive oil, paprika, cumin, and turmeric.

Step 5

In a plastic container, place the turkey or chicken fillet cut into medium pieces. Add the spice marinade. Close the container with an airtight lid and shake vigorously so that the marinade evenly coats the meat. Refrigerate for at least 1 hour, ideally overnight. If you want a leaner dish, use turkey fillet; for a richer option, you can use boneless chicken thighs.

Step 6

Meanwhile, prepare the yogurt dressing.

Step 7

In a glass jar, mix natural yogurt, tahini, 1 clove of garlic crushed in a garlic press, and 1 tablespoon of lemon juice.

Step 8

Close the lid and shake well to combine all the ingredients.

Step 9

For the salad, slice the cucumber into thin half-moons, add sliced red onion, and roughly chopped cilantro leaves.

Step 10

Thread the meat onto wooden skewers that have been soaked in water.

Step 11

Preheat the oven to 356°F.

Step 12

Heat a grill pan and fry the skewers for 3 minutes on each side.

Step 13

Transfer the skewers to a heatproof dish with sides, so they hang in the air, and finish cooking in the oven for 10–15 minutes.

Step 14

Serve with hummus and pita.
