Ingredients
- Turkey - 4 pieces
- Semi-Smoked Sausage - 2 pieces
- Marinated cherries - 3.5 oz
- Crushed Tomatoes in Their Own Juice - 1 can
- Chickpea - 1 can
- Garlic - 3 cloves
- Bay leaf - 2 pieces
- Lemon - 1 piece
- Smoked salt - 1 tablespoon
- Cayenne Pepper - to taste
- Dry White Wine - 2 fl oz
- Olive Oil - 4 tablespoons
- Parsley - 4 stems
- Couscous - to taste
Step by Step guide
Step 1
Cut the turkey fillet into medium pieces, season with salt and pepper, and sauté in olive oil until golden brown.
Step 2
Slice the bacon (originally, it was ham with minimal fat) into thin strips, and finely chop the garlic.
Step 3
Add to the turkey along with paprika, cayenne pepper, and bay leaves.
Step 4
Sauté over medium heat for 2–3 minutes, stirring occasionally.
Step 5
Grate the lemon zest and squeeze the juice from half a lemon.
Step 6
Add the marinated peppers cut into strips (can be replaced with fresh or roasted), lemon zest, and lemon juice to the turkey.
Step 7
Add the can of crushed tomatoes and chickpeas, draining the liquid from the chickpeas beforehand; you can use pre-cooked chickpeas and any dry white wine, and mix well.
Step 8
Simmer on low heat for 30–35 minutes, stirring occasionally.
Step 9
Serve with boiled couscous or bulgur, garnished with finely chopped parsley leaves.
