Description
If you have difficulty finding soba noodles, you can use wheat noodles or rice noodles.
Ingredients
- Soba Noodles - 3.5 oz
- Chicken fillet - 1 piece
- Carrot - 1 piece
- Shallot - 2 heads
- Ginger - 3.5 oz
- Oyster Mushrooms - 4 tablespoons
- Peanut Butter - 2 tablespoons
- Sesame Oil - 2 tablespoons
- Black sesame seeds - 2 tablespoons
- Scallions - ½ bunch
- Garlic - 4 cloves
Step by Step guide
Step 1
Cut one turkey steak into thin strips.
Step 2
Chop half of a red bell pepper and the carrot into roughly equal large pieces.
Step 3
Peel a piece of ginger about 3-4 cm long and cut it into matchstick-sized strips.
Step 4
Peel the shallots and slice them lengthwise into feathers.
Step 5
Slice the garlic, and cut the green onion into pieces about 4-5 cm long.
Step 6
Heat peanut oil in a wok and add the turkey, frying for about 3-5 minutes until golden brown, then add the shallots, garlic, and ginger, reduce the heat, and sauté for another 1-2 minutes until fragrant.
Step 7
Add the carrot and bell pepper and stir-fry for another 2-3 minutes. Then add the oyster sauce and mix well.
Step 8
Simmer on low heat for another 1-2 minutes. The correct consistency is when the pepper and carrot are al dente. To achieve this, turn off the heat and do not cover with a lid.
Step 9
Cook the soba noodles according to the package instructions.
Step 10
Add sesame oil to the stir-fry and sprinkle with black (or regular) sesame seeds, then mix with the cooked soba noodles and top with green onion.
Step 11
Season with soy sauce to taste.
