Description
This recipe is taken from the book 'The Culinary Book of a Movie Lover' by John Smith. A dish from the film 'The Cook, the Thief, His Wife & Her Lover.'
Ingredients
- Chicken fillet - 26.5 oz
- Basil - 1 bunch
- Lemon - 2 pieces
- Garlic - 2 cloves
- Carrot - 7.1 oz
- Celery stalk - 2 pieces
- Onion - 1 head
- Chicken Broth - 17 fl oz
- Margarine - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the basil, tear off the leaves, and chop finely. Peel the garlic and press it. Wash the lemons in hot water, zest one lemon, and add it to the basil and garlic. Peel the lemons and slice them.
Step 2
Slice the onion, celery, and carrot thinly, place them on a baking sheet, and pour the chicken broth over them.
Step 3
Remove the skin from the turkey fillet, place a layer of basil with garlic under it, then add the lemon slices. Secure the skin onto the fillet with toothpicks. Melt the margarine, brush it over the meat, season with salt and pepper, and place it on the baking sheet with the vegetables.
Step 4
Bake the meat in an oven preheated to 356°F for one hour, periodically basting it with broth. Wrap the finished meat in foil and let it rest for 20 minutes.
Step 5
Blend the basil with garlic along with the vegetables and sauce from the baking sheet. Serve the turkey with the resulting vegetable sauce.
