Turkey with tarragon, basil, and parsley
Ingredients
- Tarragon - 3.5 oz
- Turkey - 2 lbs
- Parsley - 3.5 oz
- Fresh basil leaves - 3.5 oz
- Olive Oil - 3 fl oz
- Black Cumin (Cumin) - 1 tablespoon
- Ginger - 1.8 oz
- Ground Black Pepper - 1 tablespoon
- Meyer Lemon Juice - 3 fl oz
- Red Curry Powder - 1 tablespoon
- Salt - to taste
Step by Step guide
Step 1
In a blender, blend all the ingredients except the turkey thigh into a green paste. Coat the meat in this paste and place it in a plastic container in the refrigerator for eight hours.
Step 2
Preheat the oven to 356°F.
Step 3
Tie the turkey thigh with kitchen twine to form a roulade. Place it in the oven for thirty minutes, or until the internal temperature of the roulade reaches about 140°F, if you have a meat thermometer. There's no need to cook it longer, as the turkey will become dry.
Step 4
The remaining marinade can be turned into a sauce by adding some chicken or turkey broth, if available, to the green puree.
Step 5
Serve with a cabbage salad and/or mashed potatoes.
